PASTA CON PESCE SPADA DI PIPPO (PIPPO’S FRESH SWORDFISH PASTA)

Dear readers of Papricannelle! Hope you enjoyed your weekend! We had a great Ascension weekend with friends in Trapani. And what an amazing pasta dish we had last night prepared by our dear friend Pippo! The mixture of fresh swordfish, tomatoes, eggplants and mint made a gorgeous sauce and the busiate pasta, this typical Sicilian pasta married perfectly the dish. You can also use tuna instead of the swordfish in this recipe.

There were more than 10 of us for dinner, as you can see from the final photo Pippo prepared a huge portion and believe me, not much was left! Here I give you the ingredients for 4 persons.

Ingredients (serves 4):

  • 500g eggplants, cleaned, diced and fried
  • extra virgin olive oil
  • 4 garlic cloves, peeled and roughly sliced
  • a glass of white wine
  • 200g fresh swordfish fillet, diced
  • 500g fresh cherry tomatoes, cleaned and quartered
  • fresh mint leaves
  • salt and pepper to taste
  • 400g busiate pasta
  • a touch of sunkissed summer
  1. First prepare the eggplants: clean, dice and fry them in olive oil
  2. Bring a large pan of salted water to boil, add the pasta and cook according to packet instructions or 1 minute less to leave it al dente as you will continue cooking it some more with the sauce once you transfer it to the frying pan.
  3. Next, put a large frying pan on medium-high heat. Add a good glug of olive oil followed by the garlic. Be careful not to burn the garlic. To avoid this, Pippo actually added some water to the frying pan. Stir for a couple of minutes.

4. Next add the chopped swordfish and fry for 3-4 minutes.

5. Then add the white wine. Be careful, it will sizzle but smell fantastic. Let the alcohol evaporate and lower the heat.

6. Season with salt and pepper.

7. Next add the chopped tomatoes, cook for 3-4 minutes and finally pour in the fried eggplants. Sprinkle with chopped mint leaves. Give it a good turn and stop the heat.

8. Before draining the pasta put aside a cup of cooking water. Now drain the pasta and pour it in the frying pan with the sauce. If you find the sauce is too thick you can add some of the cooking water. Mix well. Add some more salt if needed and decorate with a big handful of mint leaves. Enjoy!
