Happy Monday dear readers of Papricannelle! Hope you got your week off to a good start despite the rain and grey skies in the Parisian region. Don’t despair, summer isn’t over yet, we’ve got some more sunny days to come! Hope you also managed to squeeze in a workout today, it’s important to kickstart your week on a high vibe – working out, eating right and getting enough zzz’s. I got to play some tennis at lunch break today, really, what a great way to start the week! And as for the nutrients, I prepared this salad tonight: it’s fresh, it’s light, full of vitamins and lots of taste. And oh so very simple! I added some of my homegrown broccoli sprouts to enhance the nutritional value. You could also sprinkle with hemp or pumpkin seeds, play with it as you like. But the basic recipe is so very good, believe me, give it a try, it’s worth it!
Ingredients (serves 4):
- 3 oranges
- 1 grapefruit
- 2 bulbs of spring onions
- extra virgin olive oil
- Himalaya salt, freshly ground black pepper
- fresh parsley
- fresh sprouts
- a touch of sunkissed Indian summer
- Prepare the oranges and grapefruit: trim away all the skin and pith and cut into segments. Thinly slice the onions and add the fresh sprouts.
- In a salad bowl mix the citrus fruits, the onion and the sprouts. Add a good handful of finely chopped fresh parsley. Dress with the best quality olive oil you have, sprinkle with salt and pepper according to taste. Enjoy!
